This classic peach cobbler features juicy peaches baked in a lightly sweetened filling with a touch of flour to thicken, all nestled under a from-scratch pastry crust. Whether you use fresh or canned peaches, the result is a warm, bubbling dessert with golden, tender strips of pastry on top. Serve with a scoop of vanilla ice cream for a timeless treat that never disappoints.
Ingredients

3 cups peaches (fresh or canned)

3 Tbsp flour

1 ½ cups sugar (less if using canned peaches)

1 stick margarine, melted

¾ cup water

1 ½ cup sifted enriched flour

¾ tsp salt

½ cup shortening

½ cup milk or a little less
Directions
Preheat oven to 350°F.
For the fruit filling, mix together peaches, flour, sugar, melted margarine, and water. Pour mixture into a greased 13x9x2 inch baking dish.
To make the pastry, sift together flour and salt. Cut in shortening with a pastry blender or two knives until the mixture resembles coarse crumbs. Add milk gradually, mixing just until dough comes together.
Roll out the pastry dough and cut into strips. Lay the strips over the peach mixture in a lattice or patchwork style.
Bake at 350°F for 45 minutes, or until the pastry is golden brown and the fruit is bubbling.
Serve warm, optionally topped with vanilla ice cream.
