This traditional Southern dessert combines creamy mashed sweet potatoes with orange juice, lemon zest, and fluffy whipped egg whites to create a souffle-like pudding that’s both airy and rich. Topped with a sprinkle of cinnamon or slivered citron, it’s an old-fashioned dish with timeless flavor. Serve warm as a comforting fall or holiday treat.
Ingredients

1 lb. sweet potatoes

1 cup sugar

6 egg yolks, well beaten

1 cup orange juice

½ cup butter

Grated lemon rind

6 egg whites

Citron or cinnamon
Directions
Preheat oven to 350°F.
Prepare the sweet potatoes by peeling, boiling, and mashing (or pressing through a colander or ricer) 1 lb. of sweet potatoes.
In a large bowl, combine the mashed sweet potatoes with sugar and melted butter.
Beat in egg yolks one at a time, followed by grated lemon rind and orange juice, mixing thoroughly after each addition.
Beat egg whites to stiff peaks in a clean bowl. Gently fold them into the sweet potato mixture.
Grease a baking dish with butter and pour in the pudding mixture. Sprinkle the top with granulated sugar and a dash of cinnamon or thin slices of citron.
Bake at 350°F for 35–45 minutes, or until the pudding is set, lightly puffed, and golden on top.
Let cool slightly before serving.
Recipe Note
- Citron adds a nostalgic touch but can be replaced with a simple sprinkle of cinnamon for a more familiar flavor.
