Southern Pear Preserve Cake is a tender, richly flavored dessert made with sweet pureed pear preserves, butter (or margarine), and a hint of vanilla and almond. The batter bakes into a golden, moist cake that’s comforting and nostalgic—especially popular in Southern kitchens. It’s simple to prepare, bakes beautifully in a 9x13-inch pan, and slices easily for potlucks, celebrations, or afternoon coffee. The preserves not only flavor the cake but keep it incredibly soft and moist for days.

1 lb margarine

5 large eggs

3 ½ cups self-rising flour

1 pt pureed pear preserves

1 tsp vanilla

½ tsp almond flavoring

½ cup water
Directions
Preheat oven to 325°F. Grease and flour a 9x13-inch baking pan.
In a large mixing bowl, cream together the sugar and margarine until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Gradually add the self-rising flour, alternating with the pureed pear preserves and water. Mix until just combined.
Stir in the vanilla and almond flavoring.
Pour the batter into the prepared pan and spread evenly.
Bake for 60 minutes, or until a toothpick inserted in the center comes out clean. You may need to bake a little longer depending on your oven.
Allow the cake to cool in the pan before slicing and serving.
Recipe Note
- If you don’t have pureed pear preserves, you can blend chunky preserves until smooth or mash well with a fork.
- You can substitute margarine with unsalted butter for a richer flavor.
