3 cups sugar

5 tsp baking soda

4 eggs

1 cup oil or melted shortening

1 qt buttermilk

1 (15 oz) box Raisin Bran
Directions
In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
Add the eggs, oil or melted shortening, and buttermilk. Stir until just combined.
Gently fold in the Raisin Bran cereal, mixing until evenly incorporated. Do not overmix.
Preheat oven to 375–400°F. Lightly grease or line a muffin pan.
Fill each muffin cup about 2/3 full with batter.
Bake for 15–20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
Let cool slightly before serving. Enjoy warm or at room temperature.
Store unused batter in a tightly sealed container in the refrigerator for up to 5 weeks. Stir before using and bake fresh muffins as needed.
