Overnight Icebox Rolls are a classic make-ahead bread recipe that yields soft, fluffy rolls with minimal day-of effort. The dough is mixed, chilled, and ready to roll out when you are—making it perfect for holidays, gatherings, or meal prep. Ingredients

1 pkg. dry yeast

1 cup warm water

1/2 cup shortening

1/4 cup sugar

1 egg

1 tsp salt

3 cups flour
Directions
In a small bowl, dissolve the yeast in warm water and let it sit for 5–10 minutes until foamy.
In a large mixing bowl, cream the shortening and sugar together until smooth.
Beat in the egg until fully incorporated.
Add the yeast mixture and beat until everything is well combined.
Add the salt and flour gradually, mixing until a smooth dough forms.
Transfer the dough to a lightly greased bowl. Cover tightly with plastic wrap.
Place the bowl in the refrigerator and let the dough chill for 6–8 hours or overnight.
When ready to bake, roll out the dough on a lightly floured surface and form into rolls.
Place rolls in a greased muffin tin or on a baking sheet, spacing them slightly apart.
Cover and let rise in a warm place for 1½ hours, or until doubled in size.
Bake at 350°F for 15 minutes, or until golden brown.
Let cool slightly before serving warm.
Recipe Note
- For extra flavor, brush the tops with melted butter before or after baking.
- Dough can stay refrigerated for up to 24 hours before shaping.
