These classic Homestyle Oatmeal Cookies bring together the rich flavor of brown sugar, the heartiness of quick oats, and just the right amount of sweetness. They’re perfect as-is or can be made your own with add-ins like chopped nuts, raisins, or dates. Soft in the center with crisp edges, these cookies are ideal for lunchboxes, snack tables, or cozy evenings with a cup of tea.
Ingredients
-
2 sticks butter
-
1 cup brown sugar
-
1 cup white sugar
-
1 ½ cup flour
-
3 cups quick cooking oatmeal
-
2 eggs
-
1 tsp salt
-
1 tsp baking soda
-
1 cup nuts
-
1 tsp vanilla
-
Dates, raisins, etc. (optional)
Directions
Preheat oven to 350°F and lightly grease a baking sheet.
In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy.
Add eggs and vanilla; mix until well combined.
In a separate bowl, stir together flour, salt, and baking soda.
Gradually add the dry ingredients to the wet mixture.
Stir in oatmeal and nuts. If desired, fold in chopped dates, raisins, or other dried fruit.
Drop by rounded spoonfuls onto the greased baking sheet.
Bake for 10–12 minutes, or until golden around the edges.
Allow cookies to cool on the pan for 2 minutes before transferring to a wire rack.
Recipe Note
- For chewier cookies, don’t overbake—remove them just as the edges start to turn golden.
- You can omit the nuts or dried fruit if preferred.
- Use parchment paper instead of greasing the baking sheet for easier cleanup.
- These cookies freeze well—store in an airtight container or freezer bag for up to 2 months.
