Sopapillas are airy, golden fried pastries made from a simple dough of flour, baking powder, water, and oil. When dropped into hot oil, they puff into pillowy pockets—crisp on the outside and tender inside. Traditionally served with honey and butter, they’re a sweet, comforting treat that also pairs well with savory dishes like beans or chili. Easy to make and even easier to love, this classic recipe is perfect for family gatherings, holidays, or anytime you crave something warm and homemade.
4 cups flour
1 tsp salt
4 tsp baking powder
2 Tbsp cooking oil
1 ½ cup water
Oil for frying
In a large mixing bowl, sift together the flour, salt, and baking powder.
Add the oil and use your fingers or a fork to work it into the flour until evenly blended.
Gradually add the water, a little at a time, mixing until a soft but not sticky dough forms.
Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
Cover the dough and let it rest for 30 minutes at room temperature.
After resting, divide the dough into small round balls (about golf-ball size).
Roll each ball into a thin strip and cut into 3-inch squares.
In a deep pan or fryer, heat oil to 375°F.
Carefully drop each square into the hot oil, turning and pressing gently to encourage puffing. Fry until golden brown on both sides, about 1–2 minutes per side.
Remove with a slotted spoon and drain on paper towels.
Serve warm with honey and butter.
