Homemade Caramel Corn is a nostalgic treat made by coating freshly popped popcorn in a rich, caramel sauce. With just a few simple ingredients and slow oven baking, the result is an irresistibly crunchy snack with deep caramel flavor. You can customize it with pecans or peanuts for a nutty twist. 6 quarts popped corn

2 cups brown sugar

½ cup corn syrup

1 tsp salt

1 cup margarine (2 sticks)

1 tsp baking soda

Pecans or peanuts (optional)
Directions
In a large saucepan, combine brown sugar, corn syrup, salt, and margarine.
Bring to a boil, stirring constantly until the mixture begins to boil.
Once boiling, stop stirring and let boil for 5 minutes.
Remove from heat and stir in the baking soda.
Pour the hot caramel mixture over the popped corn and optional nuts in a large mixing bowl. Stir until evenly coated.
Spread coated popcorn onto a large baking sheet.
Bake at 200°F for 1 hour, stirring every 15 minutes to prevent clumping.
Remove from oven and stir occasionally as it cools to keep it from sticking together.
