With a buttery base and rich brown sugar pecan topping, these bars are a delightful twist on a classic cookie. Finished with a sweet and citrusy lemon glaze, they're easy to slice into squares for serving and perfect for holidays, brunches, or gifting.
Ingredients
For the cookies:

1 cup flour

¼ cup sugar

1 stick butter, softened

2 eggs, beaten

1 ½ cup brown sugar

2 Tbsp flour
-
½ tsp baking powder

½ tsp salt

1 tsp vanilla

1 cup chopped pecans
For the icing:

2 Tbsp butter, softened
-
1 ½ cup powdered sugar

Lemon juice
Directions
Preheat oven to 350°F.
Base Layer: Sift together 1 cup flour and ¼ cup sugar. Combine with 1 stick softened butter and mix until crumbly. Press evenly into a greased 9x12 inch baking pan.
Bake base for 12 minutes.
Top Layer: In a separate bowl, mix beaten eggs, brown sugar, 2 tablespoons flour, baking powder, salt, vanilla, and chopped pecans. Pour this mixture evenly over the partially baked crust.
Return pan to oven and bake for 25 minutes, or until top is golden and set.
Cool completely in pan.
Icing: Mix softened butter with powdered sugar, then stir in lemon juice a little at a time until a smooth, spreadable consistency is reached.
Spread icing over cooled bars. Let set, then cut into squares and serve.
Recipe Note
- Bars can be made a day ahead and stored covered at room temperature.
- Adjust lemon juice in the icing to taste—more juice for a tangier glaze, less for a sweeter finish.
- For cleaner cuts, chill the bars slightly before slicing.
