Rocky Road Squares combine melted semi-sweet chocolate, sweetened condensed milk, buttery richness, crunchy peanuts, and pillowy marshmallows. Everything gets folded together and chilled until firm, then sliced into indulgent squares. These rich, chewy, and nutty bars are as simple to make as they are irresistible.
Ingredients

1 (12 oz.) package semi-sweet chocolate morsels

1 (14 oz.) can sweetened condensed milk

2 Tbsp margarine or butter

2 cups dry roasted peanuts

1 (10 ½ oz.) package miniature marshmallows
Directions
In the top of a double boiler over boiling water, melt the chocolate morsels with the sweetened condensed milk and butter. Stir until smooth.
Remove from heat and set aside.
In a large mixing bowl, combine the dry roasted peanuts and miniature marshmallows.
Pour the melted chocolate mixture over the peanut and marshmallow mixture and fold together gently until everything is well coated.
Spread the mixture evenly into a 13x9 inch pan lined with wax paper.
Chill in the refrigerator for at least 2 hours, or until firm.
Once chilled, remove from the pan, peel off the wax paper, and cut into squares.
Cover and store at room temperature.
Recipe Note
- Feel free to swap peanuts for walnuts or almonds if preferred.
- Add a splash of vanilla extract or a pinch of sea salt for extra flavor.
- Store in an airtight container for up to 1 week at room temperature, or refrigerate for a firmer texture.
