Made with creamy peanut butter and a blend of brown and white sugar, these cookies are a timeless favorite. The dough is easy to mix and bakes into golden rounds with a chewy texture and slightly crisp finish. Great for lunchboxes, cookie swaps, or anytime you're craving a classic treat.
Ingredients

1 cup shortening

½ tsp salt

1 Tbsp baking soda

1 cup creamy peanut butter

1 cup granulated sugar

1 cup light brown sugar, packed

2 eggs, well beaten

1 tsp vanilla

2 cups sifted all-purpose flour
Directions
Preheat oven to 325°F. Lightly grease cookie sheets or line with parchment paper.
In a large bowl, combine shortening, salt, baking soda, and peanut butter. Mix until smooth.
Add granulated sugar and brown sugar; cream thoroughly.
Stir in the beaten eggs and vanilla; mix well.
Add sifted flour and stir until a soft dough forms.
Drop dough by rounded teaspoons onto prepared cookie sheets.
Press each cookie lightly with a fork in a crisscross pattern.
Bake for 10–12 minutes or until lightly browned.
Cool on wire racks.
Recipe Note
- Dough can be chilled for 30 minutes if cookies are spreading too much.
- Optional: Sprinkle tops with a pinch of sea salt before baking for extra flavor contrast.
