Date Roll is an old-fashioned candy made with sugar, evaporated milk, chopped dates, and pecans. The cooked mixture is beaten until thick, shaped into a log, and sliced into bite-sized pieces once cooled. Each slice delivers a perfectly balanced bite of creamy sweetness and nutty texture. It’s a nostalgic favorite for dessert trays or gifting.
Ingredients

1 ½ cups sugar

½ cup evaporated milk

¼ lb. pitted dates (about ½ package), cut into quarters

¼ lb. (about ¾ cup) pecans, chopped
Directions
In a saucepan, combine the sugar and evaporated milk. Stir over low heat until the sugar is completely dissolved.
Increase the heat and bring the mixture to a boil. Continue boiling until it reaches 238°F (soft ball stage).
While the candy boils, prepare the dates by cutting them into quarters with wet scissors. Chop or break the pecans into pieces.
When the candy reaches 238°F, stir in the prepared dates.
Continue cooking and stirring constantly until the mixture reaches 242°F, about 2–3 minutes longer.
Remove the pan from heat and allow the mixture to cool slightly, just until lukewarm.
Beat the mixture until it thickens. Stir in the chopped pecans and continue beating until the candy holds its shape.
Turn the mixture onto a piece of wet cheesecloth and form it into a roll about 1 inch in diameter.
Wrap in the damp cloth and let the roll stand until completely cooled.
Unwrap and slice into rounds. Optionally, roll the log in additional chopped nuts before slicing.
