The base is a lightly sweetened batter that bakes up moist and fluffy, while the brown sugar-cinnamon topping creates a crisp, golden crust. Ingredients

1 ½ cup all-purpose flour
¾ cup granulated sugar
2 tsp baking powder
½ tsp salt
1 beaten egg
½ cup milk
¼ cup cooking oil
¼ cup brown sugar (packed)
1 Tbsp all-purpose flour
1 Tbsp butter, softened
1 Tbsp cinnamon

Directions

Preheat the oven to 375°F. Grease a 9x9x2 inch baking pan and set aside.
In a medium bowl, stir together 1½ cups flour, granulated sugar, baking powder, and salt.
In a separate bowl, combine the beaten egg, milk, and oil.
Add the wet ingredients to the dry ingredients and mix until just combined.
Pour the batter into the prepared pan and spread evenly.
In a small bowl, mix the brown sugar, 1 tablespoon flour, softened butter, and cinnamon until crumbly.
Sprinkle the streusel topping evenly over the batter.
Bake for about 25 minutes or until a toothpick inserted in the center comes out clean.
Let cool slightly before serving.
