Made with melted margarine and packed with light brown sugar, these blondies come out soft, dense, and just the right amount of sweet. Pecans add a subtle crunch, and a dusting of powdered sugar brings a touch of elegance. These are ideal for parties, lunchboxes, or a cozy afternoon at home.
Ingredients

2 sticks margarine, melted

1 box light brown sugar (2 ¼ cups)

2 large eggs

1 ½ cups sifted all-purpose flour

1 ½ tsp baking powder

1 ½ tsp vanilla extract

¾ cup chopped pecans

Pinch of salt

Powdered sugar, for sprinkling
Directions
Preheat oven to 350°F. Grease a 9x13 inch baking pan.
In a large bowl, combine melted margarine and brown sugar. Stir until smooth.
Add eggs and vanilla; mix until fully incorporated.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually add dry ingredients to wet mixture, stirring until just combined.
Fold in chopped pecans.
Pour batter evenly into prepared pan.
Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely before sprinkling with powdered sugar and cutting into squares.
Recipe Note
- You can substitute butter for margarine if preferred.
- Feel free to omit the pecans for a nut-free version.
